Craving for a snack? The luteal phase can cause us to reach for sugary and processed foods that really don't do us any favors. This recipe is super quick to make and serves up plenty of crackers to share...or don't, we won't judge.
Ingredients
- 4 medium carrots, grated
- 1 tbsp Tomato paste
- Handful of Basil
- 2 Large Sundried tomatoes + 2 tbsp of oil from the jar
- 50ml Coldwater
- 50g Sesame Seed & Sunflower Seed Luteal blend
- 2 tbsp of Buckwheat flour (other plain flour)
- ½ tsp Salt
Method
- Preheat the oven to 150C
- Place the tomato paste, basil, sundried tomatoes & oil, cold water, and ¼ of the grated carrot in a food processor and blitz into a smooth paste
- Place the remaining carrot, the luteal blend, flour, and the salt in a large bowl and mix well
- Add the paste to the other ingredients and mix until evenly combined
- Line a large baking tray with parchment paper and spread the mixture evenly over the tray to about 2mm thickness
- Place in the oven and bake for 1 hour 15 mins. Remove from the oven and slice into squares and return to the oven for a further 15 mins
- Remove from the oven and allow to cool before storing in an airtight container
